Well, if you’re looking for a vegetable dip that doubles as an awesome salad dressing, not to mention low fat too, then you will love this easy tzatziki recipe.

What You’ll Need:

  • ½ cup onion
  • 1 cup tomato puree
  • 5-6 cashew nuts
  • 2 cups cooked rice
  • Small piece of ginger
  • 2-3 springs of curry leaves
  • 2-3 tbsp. oil
  • 1 tsp. turmeric powder
  • 1 tsp. chili powder (or as per taste)
  • 2 tsp. salt (or as per taste)
  • 1 tsp. cumin seeds

Make sure you have everything you need for the recipe.

Grate the cucumber into a bowl, squeeze out the excess water if you want to afterwards.

Finely grate or finely chop the garlic.

In a bowl, combine the dill, yogurt, salt, cucumber, lemon juice and garlic.

Mix until thoroughly combined, chill for a few hours before serving.

Serve with pita and veggies or use it to dress your salads. Makes 1 ½-2 cups! Store in an airtight container for up to 3 days in the refrigerator.
