No, they are not razor sharp, and yes, they are safe for good eats. In fact, dishes made with razor clams are considered to be a delicacy in some south-east Asian countries. This easy steamed razor clams recipe should get the ball rolling for you to try this exotic seafood from the orient. 

What You’ll Need: 

  • 2 -3 cups or 1 pound of razor clams, cleaned and washed.
  • 1 tablespoon of dried red Thai chili or just regular red chili flakes from your pantry
  • A few stalks of green onion
  • Some cilantro or kinchay (about 2-3 tablespoons once chopped)
  • 1 tablespoon fish sauce
  • 1 2-3 oz bundle of dried vermicelli or glass noodles

1. Gather everything you need for the recipe.

2. Begin by soaking the vermicelli in hot water for 10-15 minutes until it becomes soft and near translucent.

3. Drain the vermicelli and season with 1 tablespoon of fish sauce. You may leave out the fish sauce if you are watching your sodium intake.

4. Chop up the chilis cilantro or kinchay and green onions.

5. Arrange the opened razor clams on your steamer. You may have to do them in batches as 1 pound of razor clams can be a lot.

7. Sprinkle the vermicelli and clams with the chili flakes and the chopped herbs. Steam for 4 -5 minutes.
